Steps to make 改良自来红月饼

  • 1.容器中放入细砂糖、烤熟切成小丁的核桃仁、烤熟的瓜子仁、去皮切成薄片的杏仁、粉碎成绿豆大小的冰糖、青红丝、糖桂花、麦芽糖和香油。
  • 2.筛人炒熟的面粉。

  • 5.加入细砂糖、香油和麦芽糖,拌至乳化。
  • 6.倒入面粉和成面团,充分揉匀。
  • 7.滚圆后盖上保鲜膜,松弛30分钟。
  • 8.将松弛好的面团分割成10份,每个25克搓成小圆柱形。将馅料分割成10份,每个50克滚圆。
  • 9.取一个面团用手压扁,用擀面杖擀成椭圆形的面皮,从上到下卷成圆柱形。
  • 10.盖上保鲜膜,松弛一会儿,将圆柱形面坯从中间压扁,两边向中间折起,擀成中间厚四周稍薄的圆形面皮。
  • 11.包入馅料后收口。
  • 12.压扁整形后码入烤盘,用牙签在表面扎空。
  • 13.上红印,放入预热210度的烤箱中,烘烤20分钟左右,至饼身上色即可出炉。
