太妃花生酥

  • 红糖70g

Steps to make 太妃花生酥

  • 1.制作饼底:45克黄油切成小块软化以后,加入细砂糖用打蛋器打发至颜色变浅
  • 2.分两次加入鸡蛋,搅打均匀
  • 3.低筋面粉和泡打粉混合过筛入黄油里,用橡皮刮刀翻拌均匀
  • 4.将面糊平铺在内壁涂了一薄层黄油(配方分量外)的7寸方形模具内(边长约18CM),用勺子背压平
  • 5.将模具放入预热好上下火175度的烤箱中层,烤20-25分钟,直到表面变成浅金黄色取出
  • 6.制作太妃花生馅:将红糖、转化糖浆、柠檬汁、切成小块的70克黄油全部放入小锅,用小火加热
  • 7.边加热边搅拌,直到黄油溶化,并且红糖慢慢溶解,继续加热直到沸腾,然后保持小火,熬煮2分半钟,熬的时候可适当搅拌,使黄油和红糖完全融合在一起,并出现丰富的泡沫
  • 8.熬好以后,倒入烤熟的花生仁,关火,搅拌均匀即成太妃花生馅
  • 9.将太妃花生馅趁热倒入烤好的饼底上,并用勺子背边推边压,使太妃花生馅均匀的平铺在饼底上,将模具重新放入烤箱,175度烤8分钟
  • 10.取出后脱模,冷却后切成小块即可
