  • 黄豆酱200g
  • 面条400g

Steps to make 老北京炸酱面

  • 1.五花肉去皮切丁,洋葱切小片,大葱切末。
  • 2.干黄酱,甜面酱和黄豆酱混合,用料酒澥开。
  • 3.锅中加入植物油,放入洋葱小火炸至焦黄。
  • 4.捞出洋葱,放入肉丁中小火炒至变色。
  • 5.倒入酱料小火熬煮10分钟,期间不时搅拌以免糊锅。
  • 6.放入白糖和一半的葱末。
  • 7.继续熬煮10分钟后关火,放入剩余的葱花拌匀。
  • 8.黄瓜擦丝,胡萝卜擦丝焯熟,豆芽焯熟。
  • 9.面条煮熟过凉放入碗中,码上蔬菜,盛一大勺炸酱,拌匀即可。
