干果戚风蛋糕

  • 低粉130克
  • 干果 (葡萄干、黑提干、蓝莓干、开心果)共70—80克
  • 鸡蛋7个
  • 牛奶100克
  • 白砂糖90克
  • 玉米油60克
  • 新鲜柠檬汁数滴

Steps to make 干果戚风蛋糕

  • 1.准备好所用原料。
  • 2.蛋清蛋黄分离,将牛奶、玉米油倒入蛋黄盆中,用手动打蛋器混合均匀。
  • 3.低粉筛入蛋黄糊中,用8字型手法将蛋黄糊与低粉混合。
  • 4.用橡皮刮刀将蛋黄糊中的一些低粉颗粒在盆内抹开后放一旁备用,(盆上盖上保鲜膜,防止蛋黄糊表面干燥)。
  • 5.蛋清打入无水无油洁净的盆中,滴入几滴柠檬汁搅打出大的鱼眼泡,然后90克白糖分三次加入;第一次比较大的鱼眼泡时加入第二次非常细腻的泡沫时加入第三次蛋清打至略有纹路时加入
  • 6.将蛋清打至有清晰的纹路,提起打蛋器有直立的小三角的干性发泡状态时就可以了(千万小心不要打过了)
  • 7.取1/3的蛋白糊与蛋黄糊混合(用8字手法或由底向上轻柔的搅拌,不可画圈搅拌。)
  • 8.剩下的蛋白糊分两次与蛋黄糊搅拌均匀。
  • 9.模具中先倒入一半的面糊,均匀地撒入干果。
  • 10.倒入剩下的面糊,在台面上磕几下,震出面糊里的大气泡。
  • 11.烤箱提前预热,145度,中下层烤50—60分钟。(我的烤箱温度偏高)考好后即刻取出倒扣晾凉脱模。
  • 12.有点粘模。
