家常风味小炒肉
年夜饭我做了一道辣子鸡丁,配料之一用的就是杭椒。

   腊月二十九准备年夜饭,因为气温在零下,虽然开着空调,可
要做二十几道菜,几个炉子一起上,炒好的菜也怕凉了。因为抢着火,觉得杭椒没炒出味来。儿子提议,啥时单用杭椒炒一次给他吃,要吃出杭椒特有的辣味。

好不容易有点时间,就诞生了这盘小炒肉。选用的里脊肉,虽说不像五花肉那么有感觉,但用生抽腌制过,一样滴嫩、鲜。加上味足的杭椒,洋葱、大蒜提味,这盘小炒肉吃得儿子好满足···

  • 1.准备好杭椒、红椒、洋葱。
  • 2.杭椒、红椒、洋葱洗净,分别切好备用。
  • 3.猪里脊肉洗净,切薄片。
  • 4.切好的肉片加入淀粉、生抽。
  • 5.拌匀腌制1小时备用。
  • 6.蒜瓣切片备用。
  • 7.锅中油热,下入肉片滑散。
  • 8.炒至变色,盛起备用。
  • 9.锅清洗干净,倒入杭椒干煸。
  • 10.杭椒煸至起皱,加入盐,炒匀;盛起备用。
  • 11.锅中油热,爆香蒜片。
  • 12.倒入洋葱,炒出香味。
  • 13.倒入杭椒,炒匀。
  • 14.倒入肉片,炒匀。
  • 15.淋入生抽,调味。
  • 16.撒入红椒,炒至断生。
  • 17.炒好的小炒肉,调好味盛入盘中。
