Details of ingredients

  • 腰肉肩胛骨约650克
  • 生抽3大勺
  • 老抽1小勺
  • 排骨酱1大勺
  • 蚝油1大勺
  • 甜面酱1大勺
  • 柱侯酱1/2大勺
  • 八角1/2朵
  • 花椒粉1小勺
  • 胡椒粉1小勺
  • 玫瑰露3大勺
  • 白兰地2大勺
  • 排骨酱1+1/2大勺
  • 生抽1大勺
  • 蚝油1/2大勺
  • 蜂蜜3大勺

Steps to make 烤Country style Ribs

  • 1.把调料全放在一个大碗里,调匀。
  • 2.把肉放盆里,边按摩边用锥子戳洞,密一些,让汁能进入肉里面去。
  • 3.按摩一会后静置半小时,把肉翻面,再按摩。
  • 4.肉肉两边每隔约30分钟按摩。
  • 5.直至汁能全部被肉吸收,盆子基本没剩下的汁了。
  • 6.放入贮藏盒,入冰箱腌二至三天为好,比较入味。
  • 7.烤前把肉肉放入锡纸里包好。
  • 8.放入烤箱,450°F,设置30分钟,如果肉比较厚,可延长约10分钟。
  • 9.在烤的时候可准备刷面的汁,调匀。
  • 10.烤肉到时间了,取出打开包装,用插肉针插在肉最厚的地方,超过所需要的标准,很明显,笔者的肉肉已经超过了,如不备探肉针,可割开中间来观察,也可以用筷子插入肉里看有否血水渗出。
  • 11.把肉肉放入烤盘,周围刷上面汁,用Broil 功能(上火)High(高温) 先烤5分钟,再看看成色是否足够,不够再烤2分钟,再不够加1分钟,用此功能都要盯着,特别是高温档时人不能离开。
  • 12.一边烤好后烤另一边,尽可能烤四边,烤至肉条红铜色即可,把用剩下的刷面汁加清水2大勺,煮至起泡,装入汁壶,肉肉切片后浇在面上。Enjoy !
