煎酿苦瓜
瓜是自己种的,但猪不是自己养的,刚摘下几个苦瓜,个头是小了点,但很嫩很脆,再说了,那可是全有机肥呀,吃得安全,吃得放心,吃得开心。这次刚好有点肉末,干脆酿了,这不是有素有荦吗,好搭配啊。

Steps to make 煎酿苦瓜

  • 1.将把肉末腌了,用一碗,放肉末和生抽1小匙、糖1/4小匙、胡椒粉1/4小匙、花椒粉1/8小匙、料酒1/2小匙、玉米淀粉1小匙,顺着一方向搅拌均匀,葱切成碎末,加入肉末,搅拌均匀;
  • 2.将苦瓜切去头和尾的蒂,尾不用切太深,再切圆柱形,约4公分深,头和尾不透底的墩,用挖勺把里面的囊挖出来,中间的留一边做底或两边挖通的也可以,用抹上玉米干淀粉;
  • 3.把它们满满地塞上肉末;
  • 4.放在平底锅里中慢火煎两边至金黄色,要小心用筷翻动,太重手肉会掉出来;
  • 5.煎好的肉苦瓜放在一碟子上,隔水大火蒸5-8分钟;
  • 6.用一碗兑碗汁,放盐1/2小匙、糖1/4小匙、鸡精1/2小匙(可省)、麻油1/2小匙、玉米淀粉1小匙,搅拌均匀,再放入锅里煮,不断用勺或铲子搅动,等到碗汁烧全面烧出大泡,关火;
  • 7.然后浇在苦瓜墩的上面,可供食用。
