酥炸牛肉
这是年三十做的菜,由于菜做的多,没有时间拍照,只能在厨房的一角急忙的拍一张,所以图片不全也不太美观请见谅。

  • 红薯淀粉2手勺
  • 普通面粉半手勺
  • 大葱白一颗

Steps to make 酥炸牛肉

  • 1.准备牛肉,买肉时说要炸着吃的。
  • 2.切成薄片。
  • 3.葱姜切丝加入牛肉中,继续加料酒,精盐、胡椒粉抓拌均匀,腌制二十分钟。
  • 4.大碗中打入二个鸡蛋,加入适量红薯淀粉和面粉,用手抓拌均匀,拌好的淀粉糊像这种比较粘稠,到抓起还能淌下来的糊,挑去葱姜,将肉倒进来抓拌均匀,使肉片上都粘满淀粉糊。
  • 5.起锅烧油,油温五成热时下入开始炸制,炸到色泽金黄捞出,待油温升复到70度再复炸15秒捞出,复炸一遍更酥脆。
  • 6.出锅后撒上孜然粉和辣椒面或椒盐(根据个人喜好)外酥里嫩,微辣香脆!
