糖醋鱼,一个全国各地都有的美食,虽然各地的做法不同,不过,酸酸甜甜是共同的特点。粤菜里的糖醋鱼也有几种做法,如五柳鱼,菊花鱼,糖醋鱼等等,配料不同,味道各有不同。以前的糖醋鱼是不放茄汁的,不过,由于茄汁的味道能更令人开胃,而且颜色也更好看,因此,现在的糖醋鱼基本都用上了茄汁,传承和发展,个人认为都没问题,只要味道好,能吸引人,令人食指大动,那就好。

        今天做个糖醋黄鱼。现在的黄鱼比较肥美,肉质也比较嫩,不管清蒸,红烧,味道都不错,用它来做糖醋鱼,感觉也相当好。

Steps to make 糖醋鱼

  • 1.准备好材料
  • 2.将黄花鱼去鳞去肚洗净,控干,改花刀,用少许盐洒一下鱼身上。
  • 3.在鱼身上涂抹均匀生粉。
  • 4.将洋葱、胡萝卜、尖椒、姜切丝,蒜头拍碎。
  • 5.锅里加油烧至八成热,将拍好生粉的鱼肚子朝下,入锅炸至金黄,并定好型取出。
  • 6.炸鱼的油留用,将椒丝、胡萝卜丝、洋葱丝下锅稍微炸一下,取出控干油份。
  • 7.炸好的配菜控干油
  • 8.将油倒出,留少许烧热,下番茄汁炒至红亮。
  • 9.加入姜蒜,稍炒,然后加入白糖、白醋、清水,煮至糖完全融化。
  • 10.加入水淀粉勾芡,然后将炸过的胡萝卜丝、洋葱丝、尖椒丝入锅炒匀。
  • 11.将调好的糖醋汁淋在黄鱼身上就好了。
  • 12.酸酸甜甜就是你,美味的糖醋鱼。
