椒子酱
椒子酱是我们当地的一种传统特色。每当冬天的大萝卜上市后,很多的人就开始忙碌着制作萝卜干或椒子酱。家家做上满满一大锅又香又营养的椒子酱,吃的时候用盘子盛出来一部分,可以吃上好几顿。
我这次做的椒子酱是素的,有的人家还喜欢在素的里面放一些香干丁。有的人家喜欢吃荤的,还切一些肉丁在里面,味道也是十分的香。但是万变不离其宗哦,主料就是大萝卜。

Steps to make 椒子酱

  • 1.准备大萝卜。
  • 2.把萝卜洗净切去头部和须根。切成1公分至1公分半立方左右的小丁。
  • 3.黄豆洗净也用水泡至全部涨开没有皱褶为止。
  • 4.花生洗净用水泡至全部涨开没有皱褶为止。
  • 5.然后把黄豆和花生加入花椒、大茴喝水置火上煮熟。煮至9成熟时再加盐煮至熟。
  • 6.准备葱、姜、蒜、花椒、大茴。
  • 7.锅置火上加入色拉油。油温7成热时放入花椒、大茴炸香,再接着放入葱姜蒜炸香。
  • 8.然后放入萝卜丁翻炒均匀。
  • 9.当萝卜略变色时放入老抽翻匀。
  • 10.再放入红辣椒。
  • 11.放入香叶。
  • 12.再放入煮好的花生和黄豆及少量的盐,并加入适量的水炖煮至萝卜全部熟透即可。
