  • 白醋1匙
  • 高度白酒1匙
  • 十三香1g

Steps to make 自制油泼辣子(辣椒油)

  • 1.准备一个空碗,把图上四种食材准备好。
  • 2.再准备上面的辅料。
  • 3.再准备好这些调味料。
  • 4.碗里放盐、十三香、白醋、白酒,再倒一些熟凉油,拌匀。这一步是为了一会儿泼热油的时候不会把辣椒粉炸糊。
  • 5.锅里烧油,开小火,凉油的时候,放入洋葱和葱姜蒜,等到食材微微变色,加入花椒、八角、桂皮和香叶,锅里食材都变微黄时,放入香菜和芹菜。
  • 6.炸至变黄,捞出。
  • 7.锅里升高油温至七八成热,分三次泼在辣椒面上。
  • 8.每泼一次,都要用筷子搅拌,使辣椒粉受热均匀。三次之后,静置20分钟就可以了(静置是因为烫手)。好啦,做好啦!
