家常红烧肉

Steps to make 家常红烧肉

  • 1.五花肉一块 。
  • 2.切成厚块。
  • 3.烧开一锅水, 将五花肉入锅焯水3分钟。
  • 4.捞起后洗去浮沫 ,沥干水分备用 。
  • 5.准备配料 :姜、干辣椒 、香叶、 桂皮 、八角、 冰糖。
  • 6.起锅热油 ,将五花肉倒入锅中。
  • 7.煸出部分油脂 ,铲起备用 。
  • 8.锅中留底油 ,放入冰糖,用锅铲敲碎 ,小火炒出糖色 。
  • 9.炒出焦糖色 。
  • 10.将五花肉倒回锅中,翻炒上色 。
  • 11.倒入姜、干辣椒和香料,炒出香味 。
  • 12.再放入盐、酱油 、料酒、红曲粉、 胡椒粉调味 。
  • 13.翻炒均匀 。
  • 14.加入没过五花肉的水 ,大火烧开后转至炆火焖30分钟。
  • 15.时间到,水分已收至粘稠 ,撒点鸡精提鲜,翻炒后均匀出锅 。
  • 16.成品 。家常红烧肉 ,香甜软绵, 肥而不腻。
