烧卖有很多种,个人还是比较喜欢水晶的,看着就惹人喜欢。馅料也有很多种,翡翠的,肉的......这次把荠菜和肉还有糯米混在一个试试看,效果还不错,我们两人是比较喜欢。

    Steps to make 水晶烧卖

    • 1.五花肉切小丁,荠菜洗净切末、香菇切丁。
    • 2.用葱姜爆香,下入五花肉翻炒,加入少许的酱油翻炒。
    • 3.下入香菇和煮好的糯米饭一起翻炒,加入调味料。
    • 4.出锅后和切成末的荠菜拌匀备用。
    • 5.糯米提前一晚上泡开,是蒸是煮的看个人了。
    • 6.澄粉和生粉以3:1的比例(和面的时候不要把生粉全倒进去,加一半吧),用开水和面,边倒水边搅拌。
    • 7.和好后,在案板上倒上色拉油,把面放在上面,揉面。这时候再加入剩下的一半生粉。也有人是和面的时候直接就全加进去了,也有人好像都不加澄粉,这个没试过。至于为什么先放一半的生粉,在贴士里会讲到。和好的面要盖保鲜膜。
    • 8.和好的面揪成小剂子,擀开,包入适量的馅料。
    • 9.上口往中间收,做成烧卖状。
    • 10.蒸锅上点上胡萝卜片,放上烧卖,上锅蒸5-6分钟即可。
