Steps to make 鱼头泡饼

  • 1.鱼头在中间斩开后洗净放入盘中,待用。
  • 2.猪肉切片,葱姜蒜去皮,略拍;红辣椒、香菜、小葱切段待用。
  • 3.黄酱3勺、豆瓣酱1勺,加少许清水搅匀。
  • 4.锅置火上下入猪肉煸炒出油,爆香葱、姜、蒜、八角。
  • 5.倒入适量高汤,大火煮至沸腾。
  • 6.放入处理好的鱼头,撇去浮沫。
  • 7.调入酱料、酱油、老抽转至小火,盖盖慢炖20分钟。
  • 8.加入适量盐,小火继续炖10-15分钟。
  • 9.转至大火收汁。
  • 10.白皮饼入锅煎至略酥,切块。
  • 11.鱼头盛入盘中,码入饼块、葱段、香菜段,倒入鱼汤即可上桌享用。
