清水纸杯蛋糕
我不明白这款小蛋糕为什么名叫清水纸杯蛋糕,不但不放一滴水,连牛奶都没有,完全就是鸡蛋。其实就跟戚风蛋糕做法差不多。

  • 玉米油50g
  • 低筋面粉50g
  • 1g
  • 柠檬汁或白醋几滴

Steps to make 清水纸杯蛋糕

  • 1.准备材料,称好面粉、糖和玉米油,将3个鸡蛋的蛋黄与蛋清分离,低筋面粉过筛备用
  • 2.蛋清加入1g盐、几滴柠檬汁,打到起粗泡,加入1/3细砂糖
  • 3.打至泡沫变得细腻,再加入1/3细砂糖
  • 4.打至起纹路,加入剩余的细砂糖
  • 5.打至提起打蛋头,会有短小直立的尖角
  • 6.再用手动打蛋器抽打浓缩
  • 7.将3个蛋黄及一个全蛋、油放入盆中
  • 8.用电动打蛋器搅打均匀
  • 9.筛入已经过筛一次的低筋面粉
  • 10.翻拌均匀
  • 11.将1/3蛋白霜放入蛋黄糊盆中
  • 12.翻拌均匀后倒入蛋白霜盆中
  • 13.再次翻拌成浅黄色、光滑细腻的蛋糕糊
  • 14.倒入模具中八分满
  • 15.倒入模具中的蛋糕糊要能够保持倒入的形状不变,说明蛋白打发到位且拌匀时没有消泡,那么这个蛋糕就成功90%了
  • 16.放入预热好的烤箱中层,上下火130度烤40分钟,即可出炉。漂亮的纸杯蛋糕就烤好了!
