Steps to make 水煮鱼

  • 1.1000克左右的黑鱼一条,将鱼骨和鱼头洗净备用。
  • 2.鱼片用盐水将血水彻底洗净备用。
  • 3.鱼片用白胡椒粉、盐、蛋清、鸡粉和少许的油拌匀腌制10分钟。
  • 4.再放入半勺的干淀粉,拌匀备用。
  • 5.生抽和黄豆芽洗净备用。
  • 6.干辣椒切成段备用。
  • 7.葱、姜、蒜炝锅,放入少许的蚝油,加入清水煮开。
  • 8.捞出水中葱姜蒜。
  • 9.开始焯菜:先放入鱼骨和鱼头,煮开后放入生菜,生菜捞出放入黄豆芽。
  • 10.依次放入砂锅中。
  • 11.最后焯腌制好的鱼片。
  • 12.摆放在砂锅中。
  • 13.另取一个平底锅,凉油放入干辣椒和麻椒。辣椒变微红就捞出,锅中的油继续熬至帽轻轻的烟,关火。
  • 14.倒在鱼片上。美味的水煮鱼上桌喽。
