凉拌麻辣口条
说实话,父亲并不是爱喝酒的人,酒量也不大,但如果碰到母亲多做了几个菜,他就会要喝上一杯,而母亲的卤菜在我们这大家族都是名声在外,时不时的做上一些卤菜(其实主要是怕我们有时工作忙了, 做菜麻烦,每段时间母亲都会帮我们兄妹俩准备些,大部分都是我们各自带回家)。这个时候, 父亲就自己倒上一杯红酒或开上一瓶啤酒,再拉着母亲,两人围座在桌上,与我们随意聊聊,慢慢的一起消灭它。 虽然是最平常不过的场景,但总让人感到很温馨,我想也许是因为我一个人在外住的缘故吧,每次看到这都会有一种莫名的感动。

自从我开始写美食博客以后,就几乎没有带熟菜回来,与跟母亲讲好如果让我带回家的菜直接将生的给我。偶尔母亲会帮我买些我喜欢吃但又不会买的菜,就如今天的原料----牛舌吧。 第一次做它,问过母亲要注意的地方——要先将它在沸水中煮上五分钟,然后取出来将表面的白苔处理干净, 就可以随意烹饪了。沿用了母亲惯用的做法,卤制后切片凉拌,还用了父亲喜欢的麻辣口, 估计父亲看到了肯定很会高兴的喝上一杯。

Steps to make 凉拌麻辣口条

  • 1.将口条放入开水中煮上五分钟;
  • 2.拿出来后用刀将口条上厚厚的白苔都刮掉,再洗干净;
  • 3.准备好姜片, 干辣椒,花椒,八角,桂皮,香叶, 甘草等大料,冲洗干净待用;
  • 4.洗净的口条放入煲中,加入适量的生抽,酱油,姜片,大料;
  • 5.再加入适量的开水,没过口条, 大火煮开, 转为小火, 煲上四十分钟;
  • 6.注意中间要勤翻动,直到筷子比较轻松的插入进去后关火, 让它在里面泡上几个小时;
  • 7.小火慢慢的花生米炸好, 去皮备用;
  • 8.浸泡好的口条拿出来切成薄片, 准备好香菜段等其他原料;
  • 9.在卤好的口条中放入蒜末,香菜,自制红辣椒油,炸好的花生米,醋和胡椒粉等,
  • 10.在卤好的口条中放入蒜末,香菜,自制红辣椒油,炸好的花生米,醋和胡椒粉等,搅拌均匀即可;
  • 11.搅拌均匀即可。
