烟熏火腿肠披萨
再来一款披萨吧。披萨中的各种菜料红红绿绿的,真是应了要过新年的景了,看着就喜欢,尤其是拉出来的长长的奶酪丝,更是让人心花怒放,自制的意式蕃茄酱,更让我的披萨锦上添花,真是挡不住的诱惑!别犹豫了,自己熬点儿意式蕃茄酱,再做几张披萨饼吧!别忘了在自己享用美食的同时,也多做上几张送给不远处的至亲好友吧!新年快到了,一起享受这快乐时光吧!

  • 中筋面粉300克
  • 酵母3克
  • 清水200克
  • 2克
  • 黄油30克(面粉用)
  • 马苏里拉奶酪220克
  • 火腿肠一根
  • 洋葱半个
  • 胡萝卜一根,实用半根
  • 杏鲍菇一根
  • 青辣椒3根

Steps to make 烟熏火腿肠披萨

  • 1.面粉、酵母、盐入盆中
  • 2.加入清水,用筷子搅拌均匀无干粉即可,不必揉成团,盆上覆盖保鲜膜,饧20分钟
  • 3.面团取出,置于案上,揉成光滑的面团时,放入室温软化的黄油继续揉10分钟左右
  • 4.揉至能址出大薄片即可,中筋面粉能拉出此效果,让人相当满意
  • 5.面团收圆,入盆中,覆盖保鲜膜,进行基础发酵
  • 6.面团发酵期间,准备一下所用的菜料。火腿肠切片,胡萝卜切片,洋葱切成粗丝,青辣椒去籽切成粗丝,杏鲍菇切成薄片
  • 7.杏鲍菇入煎锅中,小火煎出多余的水份,然后晾凉备用,此步骤不用油
  • 8.面团发至原来的二倍大时,用手指蘸少许面粉,在面团中间顶部戳洞,不反弹不塌陷,说明发酵成功
  • 9.面团取出置于垫上,用电子秤称重,分成两等份,松弛5分钟后再使用
  • 10.取其中一个面团,擀成8寸披萨底盘的尺寸
  • 11.饼皮转移到披萨盘中,用餐叉扎出透气的小洞
  • 12.抹上一层自制的意式蕃茄酱,再撒上一层马苏里拉奶酪
  • 13.均匀地撒上菜料
  • 14.再铺上烟熏火腿肠切片,送入提前预热好的烤箱中,上下火200度,中层,先烤10分钟
  • 15.10分钟之后,从烤箱中取出披萨,在上面均匀地铺撒上马苏里拉奶酪,再重新放回烤箱中,继续烤10分钟,直至表层奶酪融化,并有些微黄
  • 16.出炉后,脱模,切块食用
