爆好吃的羊蝎子

  • 肉蔻1个

Steps to make 爆好吃的羊蝎子

  • 1.羊蝎子洗净浸泡水中两个多小时,冷水和羊蝎子一起下锅,等水开后撇出浮沫,过滤捞出羊蝎子,剩下的水备用。
  • 2.准备好所有香料
  • 3.锅内倒入油(至少是平常炒菜油量的2倍),再放入一勺牛油。(买的牛肥肉自己炼的牛油,平时炖牛腩时都用得到它)
  • 4.放入大葱段,中小火熬葱油
  • 5.待葱段微焦时捞出葱段
  • 6.放入二大勺陴县豆瓣酱,小火熬出红油
  • 7.加适量的火锅底料炒至融化
  • 8.将所有的香料(我家的八角桂皮会混合打成粉,香叶、花椒单独打成粉,这样平时炒菜时添加它们会更加入味,肉蔻和草果用剪刀剪开,干辣椒切为二半)倒入锅内,小火煸出香味
  • 9.加入开始焯羊蝎子剩余的水
  • 10.放入羊蝎子,水量没过羊蝎子,加入香菜根,一勺甜面酱,白糖开大火炖开转小火加盖炖一小时
  • 11.依个人口味加适量的盐小火继续炖半小时后,将其全部倒入火锅内,开最小档。准备了三样涮菜,木耳、冻豆腐、娃娃菜,再倒上一杯小酒,甩开膀子大快朵颐吧!
