水煮肉片
香辣的水煮肉片。

  • 猪里脊300g
  • 油菜10棵
  • 金针菇1把
  • 半根
  • 3片
  • 1头
  • 红干辣椒10个
  • 鸡蛋1个
  • 花椒半勺
  • 麻椒半勺
  • 淀粉一勺
  • 生抽一勺
  • 料酒一勺

Steps to make 水煮肉片

  • 1.肉洗净,切成大片儿。
  • 2.把切好的肉放入大碗里。放入一个鸡蛋,淀粉,料酒,生抽,鸡精和盐。搅拌均匀,放置1小时左右。再倒入香油搅拌均匀,锁住水分。
  • 3.小油菜,金枝菇,洗净。干红辣椒切成段儿,和花椒麻椒放在一个碗里,备用,留着炸辣椒油。蒜、一部分切片,和姜丝,葱段儿放在一起。一部分切沫儿,和香菜末儿放在一起。
  • 4.煮锅,烧水煮沸,放入油菜和金枝菇,捞出,控不水份,放入大碗底。
  • 5.水煮肉片小料提前兑好水,备用。
  • 6.热锅放油,多放点油,平时炒菜的两倍,先放入葱姜蒜,炒香后倒一勺郫县豆瓣酱,然后放入肉炒变色。
  • 7.肉炒熟后倒入已经兑好水的水煮肉片小料。然后煮二至三分钟。
  • 8.煮好后,倒入放有油菜和金枝菇的大碗里。撒上香菜末儿和蒜末儿。
  • 9.再次热锅放油,把辣红辣椒和花椒麻椒倒入锅里。翻炒出香味后,浇在水煮肉片上。
  • 10.这样就可以吃啦。
  • 11.味道很好,被我和老公吃的精光。
