【紫薯冰皮月饼】--- 零失败的月饼
今年中秋,前前后后做了四次广式月饼,算算也有一百来个,虽然做了这么多,但家里剩下的也没几个。于是后来又做了一些冰皮的,包了自己一向喜欢的紫薯馅,还有莲蓉馅。

冰皮月饼不但制作简单,而且少油少糖,所以多吃几个也没关系哈。

冰皮月饼的做法不一,可以先把粉类炒熟然后揉成团制作,也可以先把各种生的粉类混合好,蒸熟后再制作,两种口味相比,我更喜欢蒸熟粉类再制作。

  • 澄粉20克
  • 糖粉50克
  • 牛奶185克
  • 色拉油20ml
  • 食用紫色素1滴

Steps to make 【紫薯冰皮月饼】--- 零失败的月饼

  • 1.把牛奶、糖粉、色拉油混合,搅拌均匀。
  • 2.加入混合均匀的各种粉类。
  • 3.搅拌成没有颗粒的糊状。
  • 4.加入一滴食用紫色素,拌匀后放置半小时。(这步可以省略,那就是白色的冰皮月饼。
  • 5.大火蒸约15分钟至熟。
  • 6.趁热用筷子使劲搅拌至顺滑,然后待冷却,即可制作冰皮月饼。
  • 7.这个我用的是50克的月饼模,皮馅比例用的是2:3,把冰皮分成20克一个揉圆,把紫薯馅分成30克一个揉圆。
  • 8.取一份冰皮按扁,包入紫薯馅,慢慢把饼皮往上推,包住馅料。
  • 9.收口后揉圆。
  • 10.放入糕粉里打个滚,然后拍去多余的粉剩余薄薄一层。
  • 11.月饼模里也放入一些熟粉,用手掌盖住摇晃,使模具均匀的粘上一层薄粉,再放入月饼胚。
  • 12.压出月饼。
  • 13.做好的月饼放入容器中,入冰箱冷藏一晚即可食用。
