虎眼狮子头
狮子头,本是扬州名菜,后来为人改良,红烧,清蒸,做法多有变化。中间裹入鸡蛋,给狮子头这道经典名菜注入了不同的口感和情怀,今天和大家分享这道菜的做法。

Steps to make 虎眼狮子头

  • 1.准备需要的食材。山药小半根就行,最好的是荸荠,两者都没有就放莲藕,口感更脆爽。
  • 2.山药切碎。鸡蛋5个煮熟备用。
  • 3.肉馅里放入葱姜末,切碎的山药和一个生鸡蛋。少许的盐和生抽,老抽,黑胡椒粉,顺着一个方向搅拌。
  • 4.肉馅为了更紧致,一会儿容易裹鸡蛋,加入些面包糠是不错的选择。鸡蛋比较滑,裹的时候,要左右手来回摔打一下,让肉丸子有弹劲。
  • 5.热锅里放入油,开始用小火炸丸子,家里做油炸的,总是浪费掉不少油,我用平底锅,为了能同时放几个进去,火候也好掌握,用小勺不断翻动丸子,保证受热均匀,炸的金黄色,表皮比较硬了就可以了。
  • 6. 丸子炸好了,准备葱段姜片,还有花椒、大料、香叶、冰糖,老抽生抽和蚝油,开始炖丸子
  • 7.各种调料热锅凉油下锅后放入,放入丸子倒入温水,如果有高汤是最好的啦!等开锅后用中小火慢炖半小时左右,等丸子基本收汁后就可以出锅美美的品尝啦~~~
