原味花生牛轧糖-淡奶油版
之前先做了可可口味的牛轧糖,感觉太软了些,有牛轧糖的味道却没有那种口感,所以后来又做了一次,这次做了原味的花生牛轧糖,打算做成硬糖试试~

材料:
花生188g,淡奶油500g,水饴250g,细砂糖113g,盐3g,黄油7g

Steps to make 原味花生牛轧糖-淡奶油版

  • 1.将称好的花生倒入炒锅中
  • 2.开小火翻炒
  • 3.炒好后稍微晾凉,然后用手将花生皮搓掉,去皮留花生备用
  • 4.淡奶油、糖、水饴和盐一起倒入不粘锅中
  • 5.置于小火上加热
  • 6.注意要不断搅拌
  • 7.到比较粘稠的状态时开始用温度计测量,温度达到约136度时关火
  • 8.此时糖液已经非常粘稠
  • 9.加入黄油
  • 10.搅拌均匀
  • 11.倒入花生
  • 12.继续搅拌均匀
  • 13.然后倒入不沾烤盘中
  • 14.压平表面
  • 15.待稍晾凉后切块即可
