  • 1.将大酱倒入碗中,入沸水蒸锅蒸10分钟。
  • 2.菠菜洗净入沸水锅中汆烫去除草酸,捞出用榨汁机打成菠菜汁。
  • 3.将菠菜汁缓缓倒入面粉盆中搅拌。
  • 4.揉成光滑略硬的面团,放入冰箱冷藏室静置20分钟待用。
  • 5.面团取出后擀成薄片,撒上面粉叠成若干层。
  • 6.刀切成细面条,抖散待用。
  • 7.虾皮用温水浸泡5分钟,冲洗后攥干水分;姜、蒜切成细末。
  • 8.锅置火上少许油烧热,下入姜末爆香。
  • 9.依次倒入清水、大酱,搅匀大火煮沸。
  • 10.转至小火,调入少许鸡粉、盐,白砂糖1/2勺。
  • 11.小火熬制30分钟,酱汁收至浓稠时,撒入蒜末。
  • 12.炒出香味即可盛出入碗。
  • 13.锅中水烧沸,放入面条搅散后煮至断生,捞出盛在碗内。
  • 14.锅置火上倒入适量香油烧热。
  • 15.下入虾皮小火煸至金黄色。
  • 16.将虾皮热油浇入炸好的酱中。
  • 17.将素炸酱添入面碗中即可。
