宫保鸡丁是我家饭桌上的常客,不知道为啥,家里人都特别喜欢吃,每次去饭店也是必点之菜,所以我下大工夫学习了这道菜,现在做起来真的不逊色于饭店里的大厨哦。看到家人吃得开心,吃得健康,真的是很开心。
宫保鸡丁这道菜选用鸡肉为主料,花生米、黄瓜、辣椒等辅料烹制而成。 红而不辣、辣而不猛、香辣味浓、肉质滑脆。由于其入口鲜辣,鸡肉的鲜嫩配合花生的香脆,真是美味至极,要想做好这样一道菜,对火候要求就很高,炸花生米时,小火慢炸,这样炸好的花生才会香脆,上色也不会太黑。炒制的时候就需要大火力爆炒,迅速锁住食材营养,更多的体现食材本身的滋味,掌握了这些技巧,就可以轻松搞定这道菜。

Steps to make 宫保鸡丁

  • 1.准备食材,鸡胸肉切成1cm左右的小块,黄瓜、胡萝卜切小丁。花生提前用开水浸泡5分钟,剥去外皮。
  • 2.姜切末,干辣椒剪短。
  • 3.鸡肉丁用水淀粉,少许酱油腌制20分钟。
  • 4.糖、淀粉、料酒、酱油,盐,少许水,勾成芡汁。
  • 5.锅内倒入适量食用油,小火炸至花生米酥脆,捞出晾凉备用。
  • 6.油锅内油锅内倒入腌制好的鸡肉丁,过油约半分钟,待鸡肉熟了,捞出沥干油分。
  • 7.锅内留底油,煸香花椒、姜末、干辣椒。
  • 8.放入鸡肉丁、黄瓜丁、胡萝卜丁翻炒1分钟。
  • 9.芡汁淋入锅中,大火收汁。
  • 10.待汤汁浓稠撒入炸好的花生米即可出锅。
