糖醋里脊是一道非常经典的大众菜肴,它香脆美味,酸甜可口,能使人食欲大开,老少皆喜!

  • 料酒一匙
  • 白糖二匙
  • 浓缩橙汁一匙
  • 番茄沙司80g
  • 玉米淀粉一把
  • 普通面粉二把
  • 无铝泡打粉5g

Steps to make 糖醋里脊

  • 1.鲜猪里脊肉,我用了半条。
  • 2.先切一厘米厚的片,再切成条。
  • 3.加入少半匙精盐,一匙料酒抓拌至起粘,腌制五分钟。
  • 4.调脆皮糊:面粉和玉米淀粉的比例是2:1,普通面粉二把(用手抓二把),玉米淀粉一把(手抓),加五克无铝泡打粉拌匀。
  • 5.分次加入清水,用手上下抓拌,直到顺滑,抓起能滴落的状态,脆皮糊不能太稀,太稀挂糊不均匀,太干成品感觉面多,最后再加少许食用油拌匀。
  • 6.将肉条倒入面糊中拌均,拿起一条看看,像这种能均匀的裹上一层面糊的状态就可以。
  • 7.来调个糖醋汁,二匙白糖,少许精盐,一匙白醋,半匙陈醋,一匙橙汁搅拌均匀。
  • 8.起锅烧油,油温四成热时下入肉条开始炸制。
  • 9.慢慢炸个三分钟左右,肉条酥脆表面变成金黄色捞入。
  • 10.等油温升复到六七成热时,再下入肉条复炸一次,约10秒捞出,复炸能使肉条更加的酥脆,既使挂上糖醋汁依然香脆可口。
  • 11.锅中下入番茄沙司小火煸炒。
  • 12.加入糖醋汁继续煸炒把汁收浓,加入少许食用油炒匀,使糖醋汁和油充分的融合。
  • 13.下入肉条迅速的翻拌,使糖醋汁均匀的挂在上面。
  • 14.出锅。
