Steps to make 麻婆豆腐

  • 1.姜蒜切米,葱切葱花,香菇切丁,豆瓣酱剁碎
  • 2.豆腐切块过盐水,冰水冲净冰镇
  • 3. 坐锅起油,下剁碎的豆瓣酱炒出红油,下豆豉、香菇炒香
  • 4. 下提前划散的肉末,翻炒均匀
  • 5. 下高汤煮开,加入适量辣椒红油
  • 6.下豆腐,再次煮开转中火慢煮,每隔一会转动一下锅子
  • 7. 待汤汁收到一半,下盐,将碾碎的花椒撒入,勾芡大火收汁,连续转动锅子,至汤汁收到三分之一撒葱花出锅即可
