Steps to make Kwai Spring Cake -- a small method as thin as cicada wings
- 1. Required materials; Dumpling skin, salad oil (or corn oil).
- 2. Take a small bowl, completely free of water, and pour in salad oil or corn oil (preferably not soy oil or peanut oil).
- 3. Put enough water in the steamer, bring to a boil, and brush the steaming curtain with oil.
- 4. Brush oil on the cutting board.
- 5. Take a dumpling skin and brush it with oil, ensuring that it is completely brushed and there are no areas that have not been brushed.
- 6. Take another one and put it on top, or brush it with oil.
- 7. Repeat the operation, completely brush the oil on top of each sheet without any omissions. 5-8 sheets are a stack, and I am accustomed to using 8 sheets. The top one is not painted.
- 8. Use your hands to flatten it, even if you flip it over.
- 9. Use a rolling pin to roll it out to a size of 1-1.5 times.
- 10. Put it in a steamer, cover it and steam, then go and make the next batch. After cooking, place it in a steamer and continue steaming. Repeat this process until all the pancakes are finished. Put them all into the steamer and steam for another 3-5 minutes.
