广式月饼

  • 麻油5g
  • 枧水2g
  • 奶粉10g
  • 低筋粉100g
  • 枣泥馅300g
  • 熟核桃50g

Steps to make 广式月饼

  • 1.将转化糖浆、花生油、麻油和枧水倒入盆中拌匀。
  • 2.先加入2/3的低筋粉,拌到表面光滑细腻,松弛1小时。
  • 3.加入剩余的1/3低筋粉,拌成软硬适当的面团,松弛20分钟。
  • 4.将3分割为10等份,将枣泥馅与熟核桃拌匀后分成10等份。
  • 5.将面团压扁,包入馅料。
  • 6.在模具内撒上少许面粉,将5压入。
  • 7.将包好馅料的生胚放入模具内,用手压平,并轻轻敲出。
  • 8.摆入烤盘中,喷上少量的水,以上火240度、下火180度烤约10分钟,待表面着色后取出。
  • 9.在表面刷上2次蛋黄。再烤约10分钟左右至表面金黄。
