浪漫~紫薯蛋糕卷

蛋糕卷不仅好做,还好看,而且制作时间很短!所以在我烘焙里出现频率特别高。
卷肉松是我们家最爱,但是吃太多了,卷奶油又怕胖,所以偶尔换些“里子”,这回卷紫薯,健康吧,还好看!
紫薯含丰富的硒元素和花青素。对很多疾病有预防和治疗作用,被誉为人体第七大必需营养素。据说,当然是专家研究说花青素是维护人类健康最直接、最有效、最安全的自由基清除剂。

  • 鸡蛋3个
  • 色拉油:35ml
  • 55ml
  • 细砂糖(蛋白)35g
  • 细砂糖(蛋黄)15g
  • 低筋面粉70g

Steps to make 浪漫~紫薯蛋糕卷

  • 1.紫薯去皮切小蒸熟,加糖,牛奶用勺子压成泥,备用。
  • 2.蛋白加几滴醋打到出粗泡时加三分一糖,继续打中间分两次加入剩下的糖,打到湿性发泡(如图2)。
  • 3.蛋黄加糖打发白。加入油打匀,再加水搅拌均匀。
  • 4.取三分之一蛋白霜加入蛋黄糊里翻拌均匀。
  • 5.再全部倒入蛋白霜里,翻拌均匀。
  • 6.烤盘放油纸,倒入蛋糊,抹平,震几下。放入预热好的烤箱,上下火170度18-20分钟。.取出盖上油纸,翻面撕去底下油纸。
  • 7.抹上紫薯泥。
  • 8.借助油纸卷起,定型10分钟,挤上紫薯泥装饰。
