豆腐脑又称“老豆腐”其色泽金红透亮,质微稠,舀入碗中再加入蒜汁、香菜、韭菜花,淋点香油、木耳黄花菜卤浓香无比,是大众喜爱的早餐。

    Steps to make 豆腐脑

    • 1.材料:内酯豆腐、黄花菜、黑木耳调料:盐、老抽、水淀粉配料:蒜水、香菜末、辣椒油
    • 2.干木耳和黄花提前用温水泡发备用。
    • 3.内脂豆腐取出后切成大块,汤锅中的水烧开放入少量盐,然后放入豆腐焯烫约15秒钟,然后关火暂时不用取出豆腐。
    • 4.锅中加入少许油烧到4成热,然后放入木耳和黄花炒出香味。
    • 5.倒入泡木耳和黄花的水,注意要沥去底部的沙子。
    • 6.水能没过即可,然后倒入老抽、白糖、盐拌匀。
    • 7.待锅中的水烧开后划圈淋入水淀粉,同时不停搅拌,直到芡汁变浓即可。
    • 8.特点:味道鲜美,久吃不腻。
