Steps to make 酱香芝麻饼

  • 1.把面粉、水、酵母粉混合,和成光滑适当的面团,发酵至2倍大。
  • 2.热锅凉油,放入五花肉末,不断翻炒,煸出油脂。
  • 3.放入老干妈风味豆豉翻炒均匀。(原方是放入切碎的豆豉和两大勺辣酱)
  • 4.再加入少许葱姜末炒出香味。
  • 5.加入适量清水。
  • 6.加少许糖、盐(酌情放)定好味。
  • 7.待汤汁变少,肉末酥烂后关火,加入孜然粉(可以略多一些)和洋葱碎。
  • 8.搅拌均匀成为酱料,放凉备用。
  • 9.发好的面团擀成四方薄片。
  • 10.均匀地抹上酱料。
  • 11.上下各竖切两刀至三分之一处,如图所示。
  • 12.开始折层,第一步,把右上角的面片下折(先折左上角的也行)。如图所示。
  • 13.第二步,右下角的面片上折。如图所示。
  • 14.第三步,把面片左折,如图所示。
  • 15.第四步,再把中上的面片下折,如图所示。
  • 16.第五步,中下的面片上折,如图所示
  • 17.第六步,面片再左折,如图所示。
  • 18.第七步,上边和下边的面片分别折下来折上去,面片就折好了。如图所示。
  • 19.把面团擀成与烤盘大小相等的面片摆入烤盘内。我的烤箱是40升的,擀开后正好,如果烤箱小的话可以把面团分成两份或三份来做。
  • 20.熟白芝麻擀碎。
  • 21.烤箱预热,180度13分钟左右(温度根据自家烤箱调节,如果想吃脆一点的,适当延长一下时间),出炉后均匀地刷一层黄豆酱,撒一层擀碎的白芝麻。此步也可以用平底锅来烙制。
  • 22.最后撒上小香葱粒切块即可。
