夏日清凉甜品--焦糖芝士蛋糕
适合夏季吃的凉凉的重芝士蛋糕~juju最后加了点自己喜欢的蓝莓酱和焦糖酱来更加丰富了重芝士蛋糕的味道,它也是juju个人最喜欢的甜品top5里的私藏菜谱哦~~~

Details of ingredients

  • 消化饼干120g
  • 融化黄油30g
  • 乳酪500g
  • 砂糖100g
  • 蛋糕2个
  • 蛋黄1个
  • 奶油60ml
  • 香草1根(或香草精一小勺)
  • 砂糖110g
  • 30ml
  • 奶油120ml
  • 蓝莓酱10小勺左右

Steps to make 夏日清凉甜品--焦糖芝士蛋糕

  • 1.消化饼干用搅拌机搅碎,也可以把它放进密封袋里用擀面杖敲碎
  • 2.饼干碎倒入烤盘里以后倒入溶化黄油,搅拌均匀
  • 3.用手压平,或者可以拿平底碗压平,再放进烤箱冷藏30分钟以上
  • 4.开始搅拌乳酪酱,搅拌30秒钟以后倒入砂糖继续搅拌至均匀,注意这时不能过于搅拌,不然乳酪酱会含有过多空气,导致做出的蛋糕里会有大量气泡而且烤完以后陷得非常厉害
  • 5.继续加入鸡蛋,每次打入一个鸡蛋搅拌均匀后继续倒入下一个,第三个鸡蛋只放蛋黄
  • 6.香草根切好挂出香草籽
  • 7.乳酪酱里继续加入香草籽和奶油,搅拌至均匀就马上停止搅拌
  • 8.把乳酪酱倒进刚铺好饼干碎并且冷藏好的烤盘里,在桌面摇动几下,喜欢蓝莓口味可以放一些蓝莓酱在上面
  • 9.用锡纸包好以后把它放进更大的烤盘,倒入热水让它浸满一半,在160度烤1个小时左右,注意烤完把烤箱关掉后让蛋糕继续留在烤箱里慢慢变凉,这样防止芝士蛋糕陷得多。
  • 10.开始做焦糖,把水和砂糖放进锅里,在中火煮到颜色变棕色时倒入奶油,搅拌至焦糖和奶油完全搅拌就出锅放凉
  • 11.做好的芝士蛋糕最好冷藏2-3小时以上再食用,食用前把做好的焦糖酱浇在上面,再放点自己喜欢的坚果味道更佳哦~~焦糖酱如果太浓稠,不好浇上去可以放进微波炉转一会儿哦~
