豆鼓蒜蓉辣酱
现在辣椒,蒜头大量上市,每年都做辣酱的我手又痒痒的,早就计划着那天稍有点空去批发市场采购做辣酱的原料。由于工作繁忙,计划一推再推,趁着去批发市场附近办事,赶紧的采购了辣椒,蒜头,老姜。拎着大包小包回到家,马不停蹄的洗辣椒,剥蒜皮,蒸豆鼓。一切都准备好了,只等辣椒晾干即可开工。

    其实做辣酱很简单,家里有搅拌机更方便了。把晾干的辣椒,蒜头,姜统统的放料理机中打成蓉,加入蒸好的豆鼓,加入调料拌匀,装罐,密封二十天左右即可食用。自已在家做辣酱,吃得放心。

    这几年这个时节我都会做辣酱,虽然自家吃不了那么多,一般是送朋友,有客人、亲戚来了送给客人和亲戚。刚认识的朋友知道我喜欢做美食还会送美食,她们只会很朴素的说一句:“你这个朋友我交定了!”

  • 1.准备好材料
  • 2.豆鼓放蒸锅中蒸熟放凉
  • 3.辣椒清洗干净晾干
  • 4.蒜头和姜去皮,姜切成小块
  • 5.辣椒,蒜头,姜放搅拌机中打成蓉
  • 6.打成蓉的辣椒放入蒸好豆鼓,美极鲜,盐,白糖,高度白酒搅拌均匀,装瓶子,密封好,在室温下自然发酵20天后即可食用
