【四川】鱼香杏鲍菇
鱼香系列菜基本都是根据鱼香肉丝演变而来,鱼香汁是四川厨师创制的特殊风味,尽管菜肴中根本没有鱼,确有鱼香味,杏鲍菇做成鱼香味,绝对不输肉菜,米饭杀手,多备一碗米饭吧。

    Steps to make 【四川】鱼香杏鲍菇

    • 1.杏鲍菇切丝。
    • 2.尖椒切丝,胡萝卜切丝,木耳提前泡发好切丝。
    • 3.准备一碗水淀粉,再准备调料汁,由生抽、老抽、陈醋、白糖、白胡椒粉加少许清水调成调料汁备用。
    • 4.煮锅烧热水将杏鲍菇焯水几分钟,至杏鲍菇焯软捞出控水备用。
    • 5.炒锅烧热加入植物油,下入葱姜蒜煸炒出香味。再下入干红辣椒和花椒煸炒出香味。
    • 6.下入剁碎的郫县豆瓣酱煸炒出红油。
    • 7.大火下入杏鲍菇、胡萝卜、木耳煸炒一会。
    • 8.最后下入尖椒煸炒几下。
    • 9.倒入调料汁迅速翻炒均匀。
    • 10.淋入少许水淀粉翻炒均匀将调料汁均匀的裹在食材上。
