  • 五花肉750克
  • 细面条1小把
  • 香叶1-2片
  • 八角2颗
  • 花椒7、8粒
  • 小茴香1小撮
  • 少许
  • 少许
  • 青蒜1根
  • 卤蛋1个
  • 黄酒100克
  • 生抽50克
  • 老抽1小勺
  • 冰糖少许

Steps to make 家庭版苏式焖肉面

  • 1.锅中放水将肉放进锅中焯水。
  • 2.焯好水的肉用凉水冲洗干净。
  • 3.锅里放少许油,放一块冰糖,小火熬糖色。
  • 4.等糖色焦化成黄褐色,就可以将肉放进去翻炒上色。
  • 5.取一干净砂锅,放入葱、姜垫底。
  • 6.将肉放进砂锅。
  • 7.放入香料包。
  • 8.加入黄酒,并同时放盐、生抽调味,放一点老抽调一下色。
  • 9.加入足量的水。
  • 10.盖上砂锅盖,中大火煮开后,转小火慢炖2小时。
  • 11.关火后,将肉就泡在卤汁中一夜,使其更加入味,等吃的时候取出切片。
  • 12.准备一把细面,一棵青蒜。
  • 13.我还同时准备了一份棒骨高汤和卤鸡蛋。
  • 14.水开后,下入细面。
  • 15.等锅再次开后,捞出面条过凉水,用凉开水或者纯净水将面条冲洗一下,可以使面条更爽口。
  • 16.将面放入碗中,放上浇头,浇上一勺煮滚的汤(我用焖肉汤和棒骨高汤1:1混合)。
  • 17.撒上青蒜叶,再浇上一勺汤,一碗汤鲜面香的焖肉面就做好了。
