开胃荤菜-----葱烧大排

  • 猪大排500克
  • 小香葱1把

  • 冰糖5小块
  • 热水约800ml
  • 生抽2勺
  • 老抽半勺
  • 半茶匙
  • 香醋三分之一勺
  • 料酒2勺

Steps to make 开胃荤菜-----葱烧大排

  • 1.猪排解冻,放一勺盐可解冻快点,看电视学的。
  • 2.准备葱姜蒜大茴,姜蒜切片。
  • 3.猪排洗净斩成大块,吸干水分,两面用刀背拍松。
  • 4.大排放入盆内加料酒和姜片拌匀腌20分钟左右。
  • 5.腌好后的猪排挑出姜一会继续用,猪排粘一层淀粉。
  • 6.锅内放油,烧8成热。
  • 7.放入猪排大火炸至两面金黄。因用油勺,侧面也可以煎炸一下。捞出待用。
  • 8.另起锅放少量油,放入腌制用的姜片。
  • 9.放冰糖和大茴煸炒至糖溶化。
  • 10.先稍微放半勺生抽,防止糊锅,铺上香葱。
  • 11.放炸好的猪排。
  • 12.放热水基本没过排骨。
  • 13.放蒜片,生抽,老抽,盐大火烧5分钟。
  • 14.转小火半小时,猪排可以用筷子可以轻松插入时,淋点香醋,大火收汁,根据个人喜好决定汤汁多少,我留了很多汁,吃米饭绝配。
