中种炼乳吐司
最近立志做吐司,要做出来口感比外面好,组织和外面差不多细腻,软硬度适中,甜度适中的好吐司。其实主要促成我这荔枝死磕的原因有这几个:首先面包是烘焙中的一大重点,而且吐司对于面团的要求是面包中最严苛的;还有,吐司的味道不会被别的配料夺走,所以有一点点细微的失手都能够立刻被发现;关键还是,吐司怎么搭配都行我从来吃不腻,不担心做出来一大堆然后发愁消耗问题……
于是,我的吐司之路正式开始啦~
这个吐司专门放了三天才来写文章,味道略微偏甜,毕竟连入是很甜的东西,配方用的是自由姐的,有童鞋反映说面团会很黏,但是——根本没有的事,面包机揉面25分钟然后摔400下,完全不黏,很好操作;口感很有面筋的嚼劲,同时很柔软,三天之后密封在袋子里面也不会变硬。

  • 高筋粉250g
  • 清水185g
  • 砂糖20g
  • 炼乳50g
  • 黄油20g
  • 鸡蛋25g
  • 食盐3g
  • 酵母3g

Steps to make 中种炼乳吐司

  • 1.中种面团180g高筋粉加108g清水和3g酵母,放到一边完全发酵到4倍以上大小
  • 2.面包桶腾空,加入50g炼乳
  • 3.加入25g鸡蛋然后5g清水
  • 4.然后把中种撕成小块,放到上面
  • 5.在上面加入70g高筋粉
  • 6.然后揉面程序调25分钟(我没用完,中途停止了)
  • 7.然后加入软化的黄油,继续揉面
  • 8.再开一个揉面程序,我不知道要多久就先选了20分钟,但是大概快十分钟的时候我就停了
  • 9.然后找一个不是夜深人静的时候摔面团,咣咣咣使劲摔到完全状态为止
  • 10.揉圆了放到一边发酵发酵
  • 11.分割成三等份,先擀开
  • 12.卷起松弛一会之后,继续擀开
  • 13.卷起来,我听说最好卷起2.5到3层
  • 14.三个做好了之后放到450g土司盒里面
  • 15.放到一边发酵到七八分满
  • 16.然后放进预热好的烤箱,175度35分钟,表面上色过重的话记得盖锡纸
