Steps to make 传统韩国小菜—韩式蜜黑豆

  • 1.将黑豆洗净,加冷水720毫升,混合小苏打将黑豆泡至涨开,外皮开裂,能看见里面绿色豆仁,用水冲洗几次后沥干水分。
  • 2.将糖、盐、高汤和温开水混合。
  • 3.放入黑豆,夏天泡6小时,冬天泡12小时。
  • 4.将泡好的黑豆和泡黑豆的水放入锅中煮开,煮开水后加120毫升冷水再煮开,水开后再加等量的冷水,等再煮开时就改用微火,盖上锅盖(仅留一小条缝透气)煮3小时。
  • 5.煮至还有少许汤汁时加入麦芽糖(或者蜂蜜),麦芽糖融化后即可关火。放凉后拌入芝麻即可食用。
