广式月饼

  • 糖浆80克
  • 枧水2克
  • 花生油30克

Steps to make 广式月饼

  • 1.糖浆、油、枧水倒入容器
  • 2.搅拌均匀
  • 3.加入面粉
  • 4.搅拌无粉粒状成面团,注意不要过度揉面团
  • 5.包上保鲜膜室温醒至一小时以上
  • 6.按照自己的口味搓好喜欢的馅料和饼皮(饼皮和馅料的比例是3:7新手也可4:6)
  • 7.取一份饼皮在手心按扁
  • 8.放上馅料
  • 9.用虎口慢慢均匀的把面皮向上推
  • 10.最后收口
  • 11.揉圆
  • 12.模具放入少量淀粉
  • 13.粉在模具内晃一晃,倒出多余的粉,按压两下模具使模具只需粘上薄薄一层粉就好(也可将包好的饼球放入淀粉滚一滚拍去多余的粉)
  • 14.包好的饼球放好,套上模具按压下去
  • 15.依次做好所有的月饼,放的时候中间要有间隔
  • 16.进烤箱前先用喷水瓶轻轻的喷一层雾水,注意不要对着月饼喷,从上面喷雾水会散布在月饼上,水不能喷太多,否则回油饼皮会粘手
  • 17.烤箱预热好180度中层烤七分钟表面微微上色拿出,等到月饼温度约六七十度的样子,摸上去不烫手再用毛刷薄薄的刷上一层蛋黄液(一个蛋黄加一小勺水调成蛋黄液)等到第一遍刷好表面看上去已经干了再薄薄的刷上一遍
  • 18.再烤约10分钟,表面金黄色即可,等到月饼放凉用刷子在表面刷上一层薄薄的花生油,等到月饼回油月饼的花纹就会油亮油亮的好看
