  • 1.处理干净带鱼。
  • 2.把带鱼二面用小刀划成条(为了颜值,可以忽略),再切成小段。
  • 3.把部分葱切段,姜切丝;把带鱼放入碗中,再加入大段葱姜、料酒、盐,花椒拌腌均匀二十分钟左右,再将葱姜拿掉不要,带鱼滤干水分。
  • 4.将带鱼放在准备好淀粉盘中裹匀,再用手捏一下,让带鱼吃透淀粉,甩掉多余的淀粉。
  • 5.锅内放油烧5成热转中小火把带鱼依次放入锅中炸,等带鱼定型后再转大火,炸至金黄色即可起锅。
  • 6.滤干油装盘。
  • 7.把余下的姜蒜和小辣椒切末,另取一锅,烧热放入少许植物油,把姜蒜和小辣椒末倒入转中小火翻炒一下。
  • 8.加入(事先把生抽,白糖,米醋,少许淀粉加少许水调匀)倒入锅内一起翻炒一下,煮开起泡后,把带鱼倒入拌匀后收汁装盘。
  • 9.撒上葱花,鱼肉鲜嫩,裹满汤汁,吃起来酥软美味,回味无穷。
