南瓜蒸月饼
我国月饼品种繁多,有广式、京式、苏式、港式等等,月饼的制作工艺一般是烘烤,或者经过冷藏的冰皮月饼。今天我为大家分享用蒸锅蒸出来的月饼——南瓜蒸月饼,蒸的不上火,老人家和小孩子都可以吃哟。饼皮主要是用水磨糯米粉、澄面和粘米粉制作,加入了具有排毒养颜、强身健体、健脾和胃的南瓜泥和面而成,颜色金黄,口感软糯,Q弹,不粘牙,非常好吃。

  • 南瓜泥230g
  • 玉米油10g

Steps to make 南瓜蒸月饼

  • 1.南瓜去皮去瓤切薄片,用蒸锅隔水蒸几分钟蒸熟即可。
  • 2.用汤匙将南瓜压成南瓜泥。
  • 3.趁热将澄面倒入。
  • 4.迅速搅拌均匀。
  • 5.然后倒入糯米粉和粘米粉,和成柔软不粘手的糯米团。
  • 6.再倒入玉米油,揉至玉米油完全吸收。
  • 7.分成12个,每个35克的小剂子,馅料分成每个15克,搓圆备用。未操作的糯米粉团先盖上保鲜膜,防止风干,将小剂子压扁后放入馅料。
  • 8.收口搓圆,再搓成圆柱形,容易放入月饼模。
  • 9.表面扑点熟糕粉,50克月饼模也在熟糕粉里按压一下,多余的粉抖去,再将糯米团放入。
  • 10.在桌面上按压出月饼。
  • 11.将月饼放在油纸上,再放入蒸锅里。
  • 12.锅里的水烧开后,放上蒸笼,盖上锅盖,大火蒸10分钟左右。
