香橙面包卷
方子来自《孟老师的100道面包》,略有改动。这个量可做6个直径为10cm圆纸模面包。

  • 高筋面粉250克
  • 白砂糖40克
  • 1克
  • 耐高糖酵母4克
  • 全蛋液55克
  • 鲜橙汁105克
  • 无盐黄油15克
  • 橙皮屑1小匙(5ml)
  • 糖渍桔皮丁100克

Steps to make 香橙面包卷

  • 1.将主料中所以材料放入面包机,启动“和面”程序,程序结束后放入软化的黄油和橙皮屑,再次启动“和面”程序
  • 2.第二个“和面”程序结束,取一小块面团双手慢慢抻开,此时已经可以拉出透明薄膜了
  • 3.将这一小块面团重新揉进大面团中,将面团收圆放回面包桶
  • 4.在面包桶上盖一张烘焙纸,弹些水珠到纸上
  • 5.再盖上一块湿毛巾,盖上面包机盖发酵
  • 6.发酵至面团2倍大,用手指醮干面粉戳一下面团,手指拔出后,戳出的小洞周围没有变化就是发好了。
  • 7.取出排气、收圆,蒙上保鲜膜松弛15分钟
  • 8.擀成长约30cm,宽约18cm的长方形
  • 9.翻面后均匀地撒上糖渍桔皮丁,用手轻轻压平
  • 10.从上往下卷起,切成8等份,切口朝上放入纸模,蒙上保鲜膜二次发酵
  • 11.再次发酵至两倍大,用手指轻轻戳一下,压下去的坑(看图中面团下方小坑)不会完全弹回来就是发酵好了。
  • 12.在表面均匀地刷一层全蛋液,撒上适量杏仁粒,放入预热好的烤箱中,上火180度,下火190度烤18分钟左右出炉移到网架上晾凉
