又到一年月饼季~去年发了蛋黄和五仁馅月饼的菜谱,今年来个玫瑰花馅的月饼菜谱吧。只不过玫瑰花不确定自己能处理好吗,所以直接买的馅料。做的时候,屋里花香四溢!配上一盏清茶,再合适不过~

  • 转化糖浆105克
  • 玉米油40克
  • 枧水5克
  • 低粉170克
  • 奶粉10克
  • 玫瑰花馅料440克
  • 蛋黄一个
  • 清水少许(喷面用)

Steps to make 鲜花馅月饼

  • 1.准备材料。
  • 2.先往盆中放入转化糖浆,枧水和玉米油搅拌均匀。
  • 3.筛入奶粉和低筋面粉。
  • 4.和成面团,放入冰箱冷藏室一个小时待用。
  • 5.玫瑰花馅分成40克一个的,团成团~
  • 6.面皮到时间后,分成30克一个的团。
  • 7.取一份面皮包一个馅团。
  • 8.团成圆形后撒上干粉放入模具内。
  • 9.用力按下,一个月饼就出来了。
  • 10.都做好后,用喷壶在月饼表面喷上清水,为了防止烤的时候月饼表皮开裂。
  • 11.200度烤箱先烤5分钟定型。烤箱要提前预热。
  • 12.在月饼凉后,表面刷上蛋黄液,要均匀,不要太多,不然花纹就不清晰了。
  • 13.继续180度烤15分钟。
  • 14.月饼出炉了。因为这月饼是当天新烤的,还没回油,所以颜色还不是很漂亮。放置两到三天,颜色就会加深,口感也变好了。
