  • 老抽少许

  • 1.煮锅中加少量水,鹌鹑蛋凉水下锅,煮沸后再煮4分钟,捞出晾至不烫手,剥去外皮备用。
  • 2.小金南瓜对半切开,用勺子挖去南瓜瓤不要。
  • 3.剩余的南瓜肉切成块状。
  • 4.炒锅放油,放入冰糖,开火。
  • 5.直至冰糖融化,轻轻搅动使冰糖炒至深琥珀色。
  • 6.加入剥好皮的鹌鹑蛋翻炒半分钟。
  • 7.下入南瓜块翻炒。
  • 8.加入葱段和姜片炒香。
  • 9.干辣椒粒和花椒加入,炒香。
  • 10.加水,至微微淹过南瓜块即可。
  • 11.加少许老抽,盖上锅盖,中火。
  • 12.汤汁明显变少、南瓜微烂时加入适量食盐。
  • 13.大火收汁即可出锅。
