广式榴莲绿豆月
榴莲有一抹奇特的味道,有人赞其香,也有人嫌其臭。但是爱吃榴莲的人还是蛮多的,甚至有些人为它的味道而倾狂。榴莲属于热性的食物,吃多了可能会引起上火,而绿豆是属于凉性的,两者结合,不用担心上火的现象出现。用易小焙的月饼预拌粉不需要加枧水,很方便。此分量可以做10个月饼。

  • 细砂糖40g
  • 玉米油55g
  • 广式月饼预拌粉103g
  • 转化糖浆75g
  • 花生油25g

Steps to make 广式榴莲绿豆月

  • 1.脱皮绿豆浸泡一晚
  • 2.将绿豆放入电饭锅内胆,加入没过豆1-2CM的水
  • 3.放入电饭锅,选择煮饭键,大概45分钟左右
  • 4.绿豆煮好,煮开了花,用手一捏就碎
  • 5.用汤匙将绿豆压成绿豆泥
  • 6.不粘锅里放入压成泥的榴莲肉,炒至水分收干,盛起
  • 7.绿豆泥放不粘锅里,加入细砂糖,小火炒至糖融化
  • 8.分三次加玉米油,每次炒至吸收完油之后再加下一次油
  • 9.炒至绿豆泥抱团,加榴莲肉,拌均匀
  • 10.炒至抱团不粘锅,立即关火,盛起放凉备用
  • 11.转化糖浆加花生油
  • 12.搅拌一两分钟,乳化好
  • 13.加入月饼预拌粉
  • 14.用刮刀拌均匀
  • 15.拌成面团,盖保鲜膜室温醒发1个小时
  • 16.在等待醒发的过程中,将放凉的榴莲绿豆馅分成30克/份,搓圆。
  • 17.醒发后的月饼皮分成每份20克。搓圆
  • 18.将月饼皮压薄
  • 19.放入馅料
  • 20.收口搓圆,在表面粘一些玉米淀粉防粘,多余的粉要拍掉
  • 21.放入法焙客的木质月饼模具里,压平
  • 22.再倒扣,敲出来倒在东菱K40C烤箱自带的不粘烤盘上
  • 23.放入已经预热好190度的东菱K40C烤箱倒数第二层,烤5分钟定型
  • 24.取出晾几分钟,在月饼表面刷薄薄一层蛋黄水
  • 25.继续烘烤15分钟左右。晾凉后装入密封盒里,回油两天后再品尝
