葱花手抓饼
用半烫面做的手抓饼,里面放了好多的葱花,又香又酥,好吃得停不下来。一定要记住,要么用全烫面,也就是全部是开水来和面,要么用半烫面,即一半开水揉面,一半凉水揉面,再把二者混合在一起。千万别用凉水和面,那样热吃好吃,一凉就会硬硬的,影响口感。

Steps to make 葱花手抓饼

  • 1.面粉入盆中,倒入开水,将一半的面粉汤熟
  • 2.用筷子搅拌几下之后,再倒入适量的凉水,使另一半的面粉湿润
  • 3.先用筷子将面团搅拌成面块状,待温度降到手温时,用手揉成略光滑的面团,然后盖上盖子饧20分钟左右
  • 4.饧面的时候剥3棵大葱,洗净切成葱末,加入少许植物油和盐,拌匀备用
  • 5.饧好的面团取出,分成三等份,分别揉圆
  • 6.取其中一个面团,擀成厚约2毫米的长方形面片,上面再抹一层植物油,如果想吃咸口,可以在此步再撒些盐
  • 7.撒适量葱花铺撒在面片上
  • 8.由下向上卷成卷
  • 9.用刀将面卷纵向一分为二
  • 10.切面朝上,盘成圆盘状
  • 11.先用手按扁,再用擀面杖擀成厚约7、8毫米的饼状
  • 12.电饼铛上下盘预热后,在下盘里倒入少许植物油,用刷子涂抹均匀,将葱花饼放入盘中,选择“大饼”程序
  • 13. 将上盘合拢,两面加热,中途可以将饼翻一次身,两面煎得金黄
  • 14.趁热用筷子将葱花饼挑开,外焦里嫩,层次分明
  • 15.手抓着吃很有意思噢
