三汁焖山药
【三汁焖山药】赤油浓酱吃素菜
  米家吃饭,以清淡为主,赤油浓酱的很少,所以老抽一这类的深色酱油用也也很少。偶尔来一次,也很下饭呢。
  这里的三汁是指酱油,醋和油,酱油可以按比例加入生抽和老抽,三汁的比例大约为1:1:1,也就是说各自取同样的份量。至于总共用多少,那要看你要烧的菜有多少了。
  这种汁配和着糖,烧出来的菜味道比较浓郁,做法也比较简单,用于烧肉时要将油换成料酒,以解腻去腥。类似于三杯,但还是有区别的。
  
  今天烧的山药,成菜口感挺好。

    • 2.将山药胡萝卜去皮切滚刀块。配料改刀,准备料汁。

    • 4.下山药胡萝卜块。
    • 5.倒入料汁,放一勺糖,大火烧开后转小火焖至山药入味儿。
    • 6.出锅放葱碎。
