手作月饼#今年给咱爸妈送爱意浓浓月饼#
每逢佳节倍思亲 中秋快到了 回家看望父母最合适的还是月饼。市面上的添加剂太多了,还是自己做的最放心。

Steps to make 手作月饼#今年给咱爸妈送爱意浓浓月饼#

  • 1.原料:简箪石墨面粉110克 转化糖浆85克 简箪花生油25克 枧水2克 豆沙适量 (家里刚好有绿豆,自己炒的,红豆沙更好吃,枧水没有的话,用苏打水,小苏打和水1:3调制 转化糖浆是白砂糖和柠檬汁熬的,忘了拍照了,下次制作,给大家做个菜谱)
  • 2.转化糖浆里面加枧水
  • 3.加花生油
  • 4.用打蛋器打匀
  • 5.面粉过筛筛到打好的糖浆里面
  • 6.用刮刀拌压均匀和成面团
  • 7.和好的面团放到冰箱冷藏一个小时以上
  • 8.我用的是小饼模,30克饼皮 30克豆沙馅(我看菜谱有大神是10克饼皮40克豆沙,原谅臣妾做不到啊,技术好的童鞋可以减少饼皮的用量)
  • 9.我烤了一些面粉,用来防粘连,手上沾些熟面粉把饼皮压扁,包上豆沙馅,
  • 10.收口,第一次做,没把握,在面团上面均匀的团了点熟面粉,好脱模,
  • 11.忘了拍压膜的照片,月饼模里面放一些熟面粉,压住口晃几下,倒出多余的面粉,放入面团,压成型。
  • 12.烤盘上刷油,放上成型的月饼。
  • 13.烤箱提前预热,上下180度,烤5分钟,刷上蛋液,(一个鸡蛋我去掉了三份之二蛋白,保留蛋黄和三分之一蛋白,搅拌均匀,刷在月饼表面,有耐心的可以旁边也刷下)再烤15分钟即可。
  • 14.广式月饼有个回油的过程,放几天吃口感更好哦。
