焦糖香蕉乳酪蛋糕

  • 低筋面粉180克
  • 泡打粉3克
  • 香蕉1根
  • 细砂糖60克
  • 凉水15ml

Steps to make 焦糖香蕉乳酪蛋糕

  • 1.准备好主要的材料
  • 2.将细砂糖和15ml凉水放入小锅中,中火,不可搅拌但可以晃动一下锅具让其更均匀
  • 3.几分钟后液体开始沸腾,四周出现黄色边缘,档成为棕红色的焦糖时马上关火,倒入30克煮沸的鲜奶油混合均匀
  • 4.即成为焦糖酱,口感像太妃糖一样
  • 5.将软化的黄油和软化的奶油奶酪用刮刀混合均匀
  • 6.加入40克细砂糖搅打成乳霜状
  • 7.加入3个蛋黄
  • 8.三个蛋清分3次加入60克细砂糖,打至能拉出弯钩的湿性发泡状态
  • 9.然后取1/3打发的蛋白糊加入之前拌好的蛋黄奶酪糊里
  • 10.用橡皮刮刀翻拌均匀后,接着筛入一半的低筋面粉和泡打粉翻拌均匀
  • 11.然后再加入1/3打发的蛋白糊
  • 12.加入另一半的低筋面粉和泡打粉翻拌均匀
  • 13.最后加入切成小块的香蕉拌匀
  • 14.淋上焦糖酱大致混合一下,就是面糊了
  • 15.在模具内部抹一层薄薄的黄油,将做好的面糊倒入模具内,放入预热好的烤箱的中下层,175度烤20分钟拿出来在蛋糕当中划一刀,然后继续烤30分钟左右
  • 16.出炉后立即取出蛋糕,放凉后切块食用。放置3天后食用风味更佳。
